The air is warm, the place is quiet, and the sound of the strainer stirring the water mingles with the birdsong. What a surprise—under the greenhouse, I discover long pools in front of me filled with green-colored water, like aquatic gardens: spirulina! Standing at the edge of the basin, I watch the water move but can’t see anything— it’s microscopic…Dozens of questions come to mind: What is spirulina? How can it grow here? How and why is it cultivated? How is it harvested?

With great care and delicacy, Sabine separates the spirulina from the water in which it has grown. Every movement is gentle and respectful so as not to disturb the spirulina. Step by step, the spirulina separates itself from the water through skimming. Spirulina farmers don’t work alone—they work alongside billions of bacteria! It takes hours and hours of work to harvest just a few kilograms of the product.
Through her actions, her words, and her explanations, Sabine conveys as much passion as she does respect for the product she creates. It’s a craft she’s mastered on her own by getting to know her little charges a little better every day.

This green color is surprising—it really piques your curiosity. Sabine mixes sun-dried tomatoes with canola oil and cumin, and—voilà—a spoonful in your mouth! With just one spoonful, the flavors of each ingredient come through one after another. Wow! I can see why some adventurous chefs are experimenting with this product to elevate their dishes! Amazing!
