From the field to the chocolate bar—including the textures and the company’s history—we discover chocolate in all its forms. Production is entirely dedicated to Fair-trade andorganic cocoa!
Coffee roasting: Dardenne’s signature expertise
How does the cacao bean turn into chocolate? Through the glass, we get a glimpse ofthe crucial step: roasting. This gigantic machine allows Dardenne to roast its own cacao beans. Very few chocolatiers have mastered this step. It involves heating the cocoa beans to reduce their moisture content, which allows the nib to be separated from its shell; it is during this step that the chocolate’s initial aromas develop.
