Chimène grows and harvests plants and fruit from the Comminges region, which she dries and packages to make herbal teas.

She also prepares delicacies based on local fruit: apples, figs, angelica, plums, walnuts and chestnuts, in the form of fruit jellies, dried fruit, jams and candied fruit, as well as aperitif preparations such as Apérinoix.

It also offers vanilla and red pepper from Madagascar.
